Interactive PDF for IN PERSON meetings

Allowing the PDFs (without us doing the mods) to be interactive: check boxes etc. Also, the drop down text box to fill in pertinent information.
I use the checklists and charts in meetings on a screen to help guide some discussions. Especially the goals and review type checklist would be great to be able to collect that info LIVE...and have it in a client's email before they get home would be sweet.
